Vegetable Soup with (or without pasta)

INGREDIENTS

4 tablespoons olive oil
2+ cup finely chopped onion
2+ cup finely chopped carrot
1 cup finely chopped celery
6 garlic cloves, minced
1 tablespoon dried oregano
1 tablespoon dried basil
7 cups vegetable stock
6 medium tomatoes pureed in blender
2 cans cannelloni beans
2 kernels from roasted corn
Lime wedges

PREPARATION

Sauté veggies and seasonings, including garlic, until onions are mostly clear
add broth and bring to boil
reduce to simmer and add corn, beans, and tomatoes
Before serving add pasta of your choice AND squeeze 1/4 lime wedge lime
Add parmesan cheese if desired
